These bars remind me of pecan praline at Christmas time. A friend of mine makes the most mouth-watering pecan praline but won’t share the recipe with anyone. Probably better we don’t know really! These energy bars are a great afternoon snack to give you the boost you need to get through the rest of the day. They’re gluten and dairy free and are packed with goodness.
The healthy fats found in flax meal, tahini and pecans will give you a boost in omega 3’s and calcium, and will also help balance the sugar load of the dates so you won’t come crashing down after a sugar high! Phew!
What you’ll need:
1 ½ cups rice puffs
1 cup dates
1 cup pecans
½ cup buckinis (optional)
2 tbsp flaxmeal (optional)
½ cup coconut oil
½ cup tahini
3 tsp cinnamon
A good pinch of sea salt (more of a punch really!)
What to do:
Whizz all ingredients, except for rice puffs and buckinis (if using) in a food processor. Stir through the remaining ingredients until well combined. Press into a lined slice tray and refrigerate for 2 hours+. Slice into bars around the width and length of two fingers. Keep refrigerated until you’re ready to enjoy.
* I’ve made these in patty pans and they work a treat! Like a healthy alternative to chocolate crackles – blast from the past and so yummy!
