I know my Show + Tellers love a salad. This salad is so yummy and perfect as a side. If you’d like to have it as a main, poach some chicken and pop it on top.
What you’ll need:
1 bunch broccolini, rinsed and trimmed
1 can of chickpeas, drained
2 cloves garlic, sliced
3 tablespoons of good quality olive oil, plus more for drizzling
1 cup of fresh ricotta
Teaspoon of chili flakes
2 tablespoons of fresh lemon juice
handful of fresh mint, finely chopped
What to do:
Preheat your grill. Combine the broccolini, chickpeas, and garlic with oil in a large bowl. Season with salt and toss to coat. Transfer to a foil-lined baking sheet and grill for about two minutes, making sure to flip the broccolini once. Grill for another two minutes.
Divide among plates and top with fresh ricotta. Season with chili flakes (to taste) and more sea salt.
Drizzle with a little lemon juice and olive oil. Sprinkle with fresh chopped mint.
