Gwyneth Paltrow’s Gluten- Free Vegan Brownies

Brownies that are healthy and tasty? I know it seems like it’s too good to be true but, trust us, it’s not!! These Gluten free Vegan Bronwies are from Gwyneth Paltrow and they are delish!

What you’ll need:

2 cups white spelt flour (or gluten free all-purpose flour)

1 cup cocoa powder

1 1/2 tablespoons baking powder

pinch of kosher salt

1/2 cup vegetable oil

1 cup maple syrup

1/2 cup honey

1/2 cup strongly brewed coffee

1/2 cup coconut milk (or dairy alternative)

1 tablespoon vanilla extract

What to do:

Preheat oven to 180 degrees. Line a 9 x 11 baking dish with baking paper.

Sift the flour, cocoa, baking powder, and salt together in a large bowl. In a separate bowl, whisk together the Vegenaise or oil, the maple syrup, honey, coffee, milk alternative, and vanilla. Combine the wet ingredients into the dry. Do not over mix.

Pour batter into prepared baking dish and bake until a toothpick comes out clean, about 30 minutes. Let the brownies cool for a couple minutes then cut.
