Healthy Chocolate Coconut Truffles – Vegan, gluten free and raw!

These chocolate truffles are the ultimate triple threat – healthy, delicious and easy! Make a batch and take a couple to work with you to beat your afternoon sweet cravings –  and if you’re not working, have one of these guys with your cuppa and sit down and relax!

What you’ll need:

3 cups shredded (desiccated) coconut (plus little more for rolling)

1 cup cacao

½ cup coconut oil

¼ cup maple syrup

1 Tbsp pure vanilla extract

Optional add ins: cacao nibs, choc chips, chia seeds, crushed pecans, cinnamon

What to do:

In a small bowl, combine coconut and cacao. Add coconut oil, maple syrup and vanilla, stir to combine.

These truffles are hard to ‘roll’ together as they tend to break apart. Instead, take about 1 tablespoon of the batter and squeeze together in your hand, then move it to your other hand and squeeze. Continue squeezing until it forms a ball shape.

In a small bowl, put a few tablespoons of shredded coconut. Roll each ball in the coconut and place into a container. If you want to mix it up, you can roll them in some crushed pecans and/or cacao. Pop the container in fridge for 6-12 hours to allow the coconut oil to harden. These taste amazing when cold and just from the fridge!
