Miranda Kerr’s Spinach, Kale and Feta Salad

Miranda was in Oz recently and shared some vital information with us. And when I say vital, I do mean life-changing. The supermodel shared with us the ingredients to the salad she eats every day. I don’t know about you, but I can’t get home quick enough to whip this up! I expect to be rocking Miranda’s body in four weeks or I’ll be asking for a refund on my kale.

What you’ll need:

250 g kale (chopped finely)

2 handfuls baby spinach leaves (chopped finely)

2 baby fennel, trimmed, fronds reserved

1 cucumber, chopped

macadamia nut oil

¼ cup finely crumbled feta cheese

200g olives

2 tablespoons lemon juice

1/3 cup (80ml) macadamia oil

2 teaspoons apple cider vinegar

(serves four)

What to do:

Wash kale and remove the tough inner stem. Chop leaves and place into a large mixing bowl with chopped spinach and cucumber, and olives.

Thinly slice the fennel across the bulb with a sharp knife or mandolin. Add to bowl. Add in crumbled fetta. In a separate bowl, whisk the macadamia oil, apple cider vinegar and lemon juice together and then toss evenly over the salad.
