Popcorn Snack Bars

Forget the 3pm chocolate cravings…one of these super yummy (and healthy) popcorn snack bars will do the trick – minus the guilt!

What you’ll need:

 

8 cups popped popcorn (preferably the plain, healthy, non-butter-flavored kind, if you can)

2 cups old-fashioned oats

1 cup almonds (or any nut)

1 cup raisins (you can choose another dried fruit if you prefer – such as cranberries)

3/4 cup honey

3/4 cup brown sugar

1/4 t salt

1/2 cup white chocolate chips

What to do:

Firstly, pop the popcorn.  I used about 1/2 cups unpopped corn in 2 tablesoons of vegetable oil to pop this batch.

While it’s off popping, combine the honey, salt, and sugar in a small saucepan and bring to a boil.  Stir until all the sugar is dissolved, then remove from the heat.

In a large bowl, combine the popcorn, oats, fruit, and nuts.  Make sure to pick out all the un-popped or partially popped corn. Pour the honey syrup over the top, and stir it all up.  Make sure everything gets covered in the sweet stuff.

Grease a 9″x13″ pan and pop the popcorn mixture  in.  Use your hands to press it down firmly. Then press some white (or regular) chocolate chips into the top of half this mixture.

Refrigerate for an hour or two before cutting.  That’ll make it easier to slice. Enjoy! B xx
