Who DOESN’T want to have a sticky beak into what Rachael Finch eats in a day? Apart from being totally gorgeous, Rachael has the kind of glow that comes from within a healthy, happy and nourished body – the kind that no amount of cosmetic highlighter will get you.

Rachael is also a super busy lady juggling a heap of media and modelling commitments, a summer breakfast radio gig filling in for Fitzy and Wippa, her stunning blog (check it out here), her work as Brand Ambassador for Speedo and of course, her role as mum to one year old Violet. Tired yet?

Rachael with her adorable daughter, Violet

So, we asked Rachael what she eats in a day to keep her looking so incredible and most importantly, energetic enough to keep on top of her busy lifestyle. Get your notepads out, here we go……

Rachael’s Day on a plate

Breakfast – Avocado and green tomatoes on organic sprouted rye bread. Long black with dash of soy.

Lunch – Huge mixed salad with roasted pumpkin, cucumber, pine nuts, goats cheese and capsicum dressed with olive oil.

Dinner – Oven baked salmon (skin on) with a big side bowl of steamed greens.

Snacks – If I’m hungry I’ll make a smoothie or fresh juice. At the moment I’m loving coconut milk, frozen mango, banana, turmeric, cinnamon & coconut oil. Incredibly powerful!

Drinks – 1-2L filtered water per day, depending on activity levels.
