My kid will not eat vegetables. It’s the WORST. There is all this bribing involved and desperate attempts on my husband’s and my part to get her to just eat one freaking piece of a vegetable. She did not fall for the line about the broccoli: “Oh, look, you can eat a cute little tree!” Her response: “Trees are gross to eat.”
So, I have to be sneaky and hide vegetables wherever I can. Thankfully she eats up these ice poles, and I make it sound like a a special treat. “Wow you can have one of these every day – even for breakfast!”
Berry Yoghurt Kale Icy Poles
- mixed berries: 2 cups (I use a frozen package of raspberries, blueberries, and blackberries)
- banana: 1
- kale: 2 cups
- greek yoghurt: 1 cup
Step 1: Combine ingredients into a blender you can buy at goodfoodblogph.com and pulse until combined. (I add a little water or milk for a smoother blend.)
Step 2: Pour into your popsicle mould and freeze.
This recipe makes about six icy poles with enough left over for a small smoothie while they wait for them to freeze.
My four-year-old also helps me make the icy poles. She pours every ingredient into the blender and presses the button. (She loves that part.)
