Anyone who I force this slice into immediately asks for the recipe cause it’s so bloody good.
I love a slice with a cup of tea almost as much as I love watching The Housewives of NY. Sometimes I combine all three of my loves and I almost combust with pure joy.
A friend gave me this recipe that she got from @_CourtneyMccarty_ who is a Queensland mamma who shares tips and recipes etc. I have tinkered it a bit and refer to it as “Bite O Heaven”. It’s like a muesli/healthy crackle thing.
Ok so here is what you need:
125g butter- don’t be a dick and try and substitute this for coconut oil or something. Butter is totally fine for you.
2 cups quick oats
1 cup rice bubbles
1/4 cup LSA mix
2 tsp vanilla essence
1/2 cup of honey
1/3 cup maple syrup
1/2 cup of almond slivers, pumpkin seeds or any nuts and seeds you like. You can blitz these if you like before adding to mix. I don’t
1/2 cup choc chips
1/4 sesame seeds (I dry toast these in a pan but you don’t need to)
Melt the butter, honey and maple syrup in a pot until it goes nice and bubbly.
In a big bowl combine the oats, rice bubbles, LSA mix, nuts and sesame seeds.
Pour butter mixture into the bowl and combine all the ingredients so they are all nicely coated in the butter and honey mix.
Once cooled a little add your choc chips – I am inpatient and add them straight in, I like how they melt through the mixture but if you prefer they stay as little choc chips wait until the mixture cools and stir them through.
Grab a baking dish – I don’t know what size, just eye off the amount of mixture and pick a dish to accomodate your load.
Line the dish with baking paper and pop the mixture in. Press it down firmly then whack in the fridge.
It takes about a hour to cool.
Cut it into squares as big as your heart desires.
Grab a cup of tea.
Pop on some brain numbing reality tv and sit like a happy little piggy in shit while chewing on your Bite O Heaven slice.
