We’re BANG UP for a bit of Hot Cross Bun action this time of year, but there’s only so many buttered buns a girl can eat! So we’ve found the BEST Hot Cross Bun dessert (or breaky) that’ll wow the pants off anyone with functioning tastebuds. It’s also the perfect iso treat to make with the kids because it’s easy peasy.
Behold….Hot Cross Lemon Pudding, otherwise known as warm, custardy hot cross goodness. A big thanks to my friend Amy for this delish recipe. Happy eating!
What you’ll need:
4-6 hot cross buns (ones that are a few days old will work better)
200g lemon curd
2 large eggs
½ tsp vanilla extract
1/3 cup of sugar
50g butter, melted
1/4 teaspoon of ground nutmeg
Cream or vanilla ice cream to serve (optional)
What to do:
Grease a 1-litre baking dish that will snugly fit the buns. Cut each bun in half, and sandwich back together with a generous spreading of lemon curd. Arrange buns in the dish.
Whisk eggs, cream, milk, butter and remaining curd, then add vanilla and 3 tbsp of the sugar. Pour over the buns and stand at room temperature for 30 mins for the custard to soak in.
Heat oven to 180C. Scatter the remaining sugar and nutmeg over the pudding. Bake for 30-40 mins until the top is golden and the custard gently set. Stand for 5 mins to cool and then serve with cream or vanilla ice cream. Yum!!
